Serves 6 – 8 cooking time 3 – 5 min
300g Cooked rice (Cold)
½ medium red onion, finely chopped
1 tsp chopped garlic
¼ cup flour
50g grated cheddar cheese
Handful finely chopped fresh coriander
1 – 2 eggs
Salt / pepper
In a bowl mix all ingredients and form into golf size balls. Allow to rest in the fridge for about 20min then flatten with your hands. Heat about 60ml oil in a pan and fry patties till golden brown on both sides turning only once. Serve with sweet chilli sauce or chutney of choice
