Rice Croquettes Recipe

Serves 8

1 cup cooked rice

½ cup grated carrots

½ cup grated baby marrow

1 small red onion grated

2 green chillies finely chopped

¼ tsp turmeric

¼ tsp cumin powder

3 tbspn chopped coriander

2 tbspn flour

½ tsp salt

¼ cup oil

Place grated veggies in a clean cloth and squeeze out excess water. Mix in the rest of the ingredients except oil. Shape into small logs and refrigerate for 30-45min. Coat the croquettes in a little flour and fry in hot oil for 3-4min or until crispy and golden brown. Serve with favourite chutney or ketchup.
