Rice Biscuits – Crispy Rice Recipe

Serves 12 – 15 pieces

250g rice

1 ½ cups hot water

80ml oil

¼ tsp salt

1 tbsp rice vinegar

1 tsp castor sugar

Mix rice vinegar and sugar together until sugar dissolves. Set aside. Wash rice & allow to dry a bit. Heat 1-2 tbsp oil and add the washed rice stirring for 2-3min. Add the hot water, salt and cook without a lid on for 10-12min or until the water is absorbed. Allow to sit for 10min then pour the vinegar sugar mixture and fluff with a fork. Place rice on a baking sheet spreading evenly and press down firmly. Freeze for at least 1hr and gently cut into rectangles. Heat the remaining oil and fry 2-3min per side until golden brown and crispy. Serve as is or top with guacamole or favourite topping.
